Carrot sticks or colored bell peppers with hummus - beta carotene and vitamin C remain important nutrients for our immune system. Cut up colored peppers (esp orange and yellow) or carrots and add some hummus for extra protein.
Homemade granola/power balls - bake granola balls with ground flax and hemp seeds or pumpkin seeds (if school regulation allows) and honey or maple syrup. The healthy fats in this help give sustained energy throughout the day and fuel our bodies better than plain granola bars.
Kiwi, oranges, and strawberries all have lots of vitamin C per serving! Opt to include them as fruits for snacking on or packing in lunches.
